Holographic duality maps the dynamics of certain quantum field theories onto the dynamics of classical gravity in one higher dimension. Under certain conditions black holes in these so called ``holographic spacetimes" can exhibit instabilities where hair can develop for sufficiently low Hawking temperatures. These gravitational systems are dual to superfluids with the instability dual to the superfluid phase transition. I will discuss the black hole dynamics near the phase transition and their dual quantum field theory interpretation.
